Spinach Cheese Quiche Filling (SCD)

There are so many ways to fill a quiche.  It's also a great way to use up leftovers if you're scrounging for something to eat.

Equipment

  • Stand Mixer
  • silicon cups ot pie dish

Materials

  • 5 eggs
  • 1 c cheddar cheese shredded
  • c farmer cheese
  • 1 tbsp dried onions
  • 1 c spinach chopped
  • tsp salt

Options

  • 1 c ham chopped, optional
  • ¼ c jalapeno pepper optional, chopped

Instructions

Filling I

  • Preheat oven to 330 F.
  • Mix all the ingredients together in a big bowl. I use a stand mixer.
  • Pour the mixture into quiche crust or cups and bake for about 35-45 minutes, or until the top is turning brown and slightly jiggles..
    NOTE: If using cups, I used a #10 scoop which filled 10 silicon cups.

Filling II

  • Preheat oven to 330 F.
  • Mix cheeses together.
  • Cover the bottom of the pan with/out crust with a thin layer of cheese
  • Add the veggies.
  • Another layer of cheese
  • Add eggs beaten well.
  • Bake for about 25-30 minutes, or until the top is turning brown and slightly jiggles.

Notes

The quiche cups can be frozen.
