Mexican Shredded Beef

Equipment

Materials

shredded beef

  • 1500 g flank steak option chuck roast
  • ½ cup Beef Broth from better than bullion
  • 1 can Tomatoes diced
  • 1 Lime juiced
  • 1 Onion diced
  • clove garlic
  • 2 tbsp extra virgin olive oil
  • ¼ TSP Ground Cumin
  • ¼ tsp Chili Powder
  • ½ tsp Onion Powder
  • ½ tsp Garlic Powder
  • ¼ tsp cummin
  • ¼ tsp corisner powder
  • 400 g peppers
  • 100 g jalepeno peppers
  • 200 g sliced carrots
  • ¼ c orange juice
  • 1 c apple cider vinigar
  • 1 pinch sea salt
  • 1 pinch black pepper

Instructions

Shreded Beef

  • combine spices with salt and pepper
  • rub beef with spices
  • cutbef into inch sqrs and braze in oil and garlic
  • add 3/4 of tomatoes with liquid to pot
  • add peppers and1/2 cup orange juice and 1/2 lime juice to pot
  • Add it to the slow cooker along with the rest of the ingredients.
  • Cook on low for 8 hours or until the beef is tender and shreds easily.
  • Take the beef out of the slow cooker and shred. Remove large pieces of fat from the cooked meet as you shred it,. return to cooker to absorb juices. for 10 minutes
  • remove beef and reserve juices
  • optional: crisp up the beef under a broiler for 10 minutes.

toppin

  • slicce carrots and onion and add remaining tomatoes, mix
  • place in bowl with vinegar and soak for a day

other

  • slice jalapeno and place in jar with vinegar. serve on top after a day or two of soaking

Notes

Optional: If you would like to crisp up the beef place it on a baking sheet in a single layer with some of the liquid from the slow cooker. Broil for 5 minutes toss and broil some more until crispy.
TIP: but leave smaller pieces for flavor 
Store leftover Slow Cooker Shredded Beef in an airtight container in the refrigerator for up to 3 days.
Freeze cooled beef in a freezer-safe, airtight container or plastic bag for up to 3 months. This makes a great freezer meal!
Reheat thawed leftover shredded beef under your broiler for 10 minutes or so until warmed through and crispy.
