Longhorn Shrimp with Wimpy Broccoli (SCD)

A ‘trip recipe’, ingenious! Created this dish on the fly at the Longhorn Steakhouse in the Atlanta International Airport, Concourse C, with the help of the serving lady Jennifer. Desperate to find something I could eat with my ‘condition,’ which was beginning to flare, we went to the Longhorn Steakhouse in search of food. Voila! Jennifer not only found a lunch for me but also came up with the term ‘wimpy’. Here’s what we created seated at the table with Jennifer working with the Longhorn chef.  SCD Legal ingredients.

Longhorn Shrimp with Wimpy Broccoli - SCD

  • ½ lbs Shrimp 500g large , peeled and deveined, tails intact
  • 1 tbsp Lemon Juice
  • 1 tbsp Extra-virgin olive oil
  • 1 tsp basil
  • 1/16 tsp kosher salt
  • 1/16 tsp freshly ground pepper optional
  • 170 gm broccoli frozen


  • Preheat the air fryer to 400°F (200°C).
  • In a bowl, toss together the shrimp, spices, lemon juice and olive oil. 
  • Add shrimp in the fry basket and cook for 10 minutes. 
  • Microwave broccoli covered for 4.5 minutes with 3 tbsp water.
    Chopped Broccoli
  • Transfer the shrimp to a serving bowl.


Serve hot. Serves 2.
