Blueberry Jam (SCD)

Wicked good Blueberry Jam for all seasons and reasons.

  • 33 oz blueberries
  • 6 tbsp water
  • 3 tsp lemon Juice
  • 2 tbsp gelatin 2 envelopes of Knox Gelatine
  • 6 tbsp raw honey up to 8 Tbsp for taste


  • Clean removing stems and place blueberries in a pot
  • Add the lemon juice
  • Add the water and heat on medium until simmering then heat on low
  • Simmer for about 10-15 minutes until the berries are soft
  • Smash the berries a little bit
  • Remove from heat and sprinkle gelatin lightly and mix into the berries – leave no lumps
  • Let cool a while
  • Add the honey and mix well
  • Place in a jar and refrigerate for a few hours before serving or using
  • If the blueberries are really gelled together mix up the jam before serving or using
