Blueberry Jam (SCD)
Wicked good Blueberry Jam for all seasons and reasons.

Materials
- 33 oz blueberries
- 6 tbsp water
- 3 tsp lemon Juice
- 2 tbsp gelatin 2 envelopes of Knox Gelatine
- 6 tbsp raw honey up to 8 Tbsp for taste
Instructions
- Clean removing stems and place blueberries in a pot
- Add the lemon juice
- Add the water and heat on medium until simmering then heat on low
- Simmer for about 10-15 minutes until the berries are soft
- Smash the berries a little bit
- Remove from heat and sprinkle gelatin lightly and mix into the berries – leave no lumps
- Let cool a while
- Add the honey and mix well
- Place in a jar and refrigerate for a few hours before serving or using
- If the blueberries are really gelled together mix up the jam before serving or using
